No sun on the horizon this week and even if there is some, its UV rays are not powerful enough to allow the skin to effectively synthesize vitamin D. This vitamin is not only used for bone health, it is involved in several biological processes that directly affect energy levels and mood. We can therefore say that if we lack vitamin D, we are more likely to be tired.
Because they warm and comfort, soups are precious allies this season. One of them is particularly rich in vitamin D, thanks to a vegetable concentrated in vitamin D2 (ergocalciferol). Numerous studies (including one published in the journal ACS Omega) have shown that ergocalciferol is a regulator of body energy. It acts behind the scenes: by allowing the absorption of key minerals for muscle function and supporting the immune system, it fights the root causes of seasonal fatigue, often linked to lack of sunlight.
This vegetable is “mushrooms with wide blades, such as oyster mushrooms, which positively influence energy levels“, explains Dr Anne Gürtler on English Vogue. To increase their vitamin D content, the expert advises cutting fresh oyster mushrooms into strips and placing them on a sunny windowsill for 1 to 2 hours. Then blend them (with other vegetables or not) to make a soup. “According to studies, this can increase vitamin D content by up to 30 mcg (1,200 IU) per 100 g.”
A 250g bowl of oyster mushroom soup can cover half of the daily vitamin D needs. Oyster mushrooms are also natural sources of B vitamins essential for energy metabolism (the transformation of food into energy). Mushrooms, including oyster mushrooms, are rich in “umami” flavor (the fifth flavor), which makes the soup especially flavorful and satisfying. This is the “comforting” and delicious side.
