“We are custodians of the earth.” Speaking with some wine producers – those who work as true artisans – you sometimes have the sensation of meeting philosophers or poets. We are in Cormons, the “capital” of Friulian viticulture, between Collio and Slovenia, near Gorizia, in the cellar Borgo San Daniele by Alessandra and Mauro Mauri.

If it is true that a house is the mirror of those who live in it, everything here suggests the idea of ​​attention to detail, passion, love for beauty and “well done”. Characteristics that are transferred to the production of wine, entirely from native and organic vines.

A tasty, marine Malvasia, “a walk on the sea”. Then the great local classics, Friulano, Ribolla Gialla and Pinot Grigio. Therefore a limited but precious production of Pignolo, Arbis Ròs, the result of the cross between the Mediterranean and continental climate, full-bodied and at the same time rich in suggestions: «It was almost extinct, difficult to cultivate, the result of 20 years of work: an investment wine that rests for 6 years in the cellar”, says Alessandra. The Arbis blanc is fresher, younger and more flowery. And then Ritual, an exciting discovery that corresponds to the space for experimentation that the two brothers allow themselves: ancestral, imperfect and therefore surprising.

Borgo San Daniele was also the first Friulian company to produce Vermouth, based on wine and spices, fallen into oblivion for decades and now the protagonist of a strong rediscovery. A Vermouth that comes entirely from the internal supply chain, baptized Santòn, the name of absinthe (a fundamental ingredient of this wine, which derives its name from the German Wermutabsinthe or major artemisia) which grows in the Grado Lagoon, between land and sea. The red version is refined and more spicy, the white one more balsamic and fresh.
