I have a recipe for you that perfectly shows how to conjure up healthy, nutrient-rich ingredients into dishes that the little ones like anyway. The only difference is that the “traditional version” usually contains more sugar. You can also sweeten naturally (and less)!
Here it’s mainly the banana and the apple that do this. The wonderfully sweet smell spreads directly into the pan and automatically attracts the kids to the dining table.
Of course, creating sweetness with fruit is a wonderful way, because while you’re still enjoying the treat, our body cells are already looking forward to an extra portion of vital substances. The banana provides us with potassium, magnesium and B vitamins. Good for the nerves, muscles and heart. It contains a lot of good fiber, which is good for our intestines. In addition to their high-quality proteins, the filling oat flakes also contain zinc. This strengthens skin and nails. In addition to many other good vitamins, vitamin C in apples boosts our immune system.

But now back to our very popular pancakes: Of course they work great as lunch, but they are also unbeatable as breakfast. They give us everything we need to start the day with energy. Additional tip: They also taste delicious cold and are therefore a great “to-go snack”.
For the recipe we don’t need any exotic ingredients, but rather a simple yet nutritious combination of ingredients that we usually have in the house anyway.
For four small “banana power cakes” you need ten minutes and the following ingredients:
Power cakes:
• 2 eggs
• 1 banana peeled in pieces
• 100g oat flakes
• 1/2 apple
• 1 tbsp honey
• 3 tbsp almond milk (or milk of your choice)
• 1/2 tsp salt
• 1/4 tsp cream of tartar baking powder (Don’t you know? Cream of tartar baking powder is the more natural alternative to traditional baking powder)
For the pan:
• 4 tsp coconut oil
Preparation:
1.) Mix all the ingredients for the power cakes in the mixer to form a smooth dough.
2.) Melt 1 teaspoon of coconut oil in a pan and form 2 tablespoons of the dough into a small, flat, round power cake.
3.) Fry for 2 minutes on each side and do the same with the remaining dough.
The “banana power cakes” taste great on their own, but you can of course also spread them with your favorite jam. Bon appetite!
