Want a Big Mac without breaking your calorie counter? A dietitian offers an alternative compatible with nutritional objectives. We took a close look at what it offers and here is our verdict.
On social networks, so-called “healthy” recipes that imitate fast food classics are multiplying. Some are mostly gimmicky, others really try to rethink the codes of a popular dish. Emma Filoche, a dietitian followed on Instagram under the name @emmafitnessgoal, fits into this second category. In a recently published post, she presents what she calls “lazy people’s healthy dinner”. The idea is simple: keep what makes the identity of a well-known burger while modifying its structure to make it a more balanced meal.
In the publication, the dietician addresses her subscribers directly: “If you crave a Big Mac but want to stick to your goals, I have the solution”. The principle is based on a balancing act. Instead of removing all the elements considered gourmet, she suggests keeping several emblematic components of the burger, such as grilled beef, cheese or even pickles, while modifying what makes the whole thing the most heavy. The approach is not just caloric; it also relies on satiety and volume on the plate. In other words, the idea is to eat a visually generous portion, but composed of less energy dense foods.
The preparation of the sauce, for example, is done in a few seconds: it mixes 0% white cheese, mustard, sugar-free ketchup, a little smoked paprika and a dash of pickle juice, to which are added pieces of pickle. Meanwhile, a 5% fat beef patty is simply grilled in a pan. The goal is to obtain a portion rich in protein, presented as an important element for satiety. The fries do not disappear completely from the plate: the dietitian simply advises cooking them in the oven or in an air fryer in order to limit the addition of fat.
Another point: it transforms the burger into a bowl. Concretely, all the ingredients usually stacked between two layers are placed in a bowl. The base consists of a large portion of salad accompanied by cherry tomatoes. On top comes the hot meat, cheddar, pickles, fries and homemade sauce. The bread therefore disappears completely, replaced by this mixture of vegetables.
To check if the idea held water, we reproduced the recipe at home. The result is quite confusing at first glance, especially for those who associate the burger with its classic structure. Without the bread, it tastes more like a warm salad than a sandwich. Yet the familiar elements are there: the grilled meat, the melted cheese and the acidity of the pickles recreate some of the expected taste. The sauce also plays an important role. We repeat it often: it’s what makes the Big Mac so addictive. It is therefore difficult to find exactly the same sensation with this bowl, even if the sauce remains, it must be admitted, particularly tasty.
In short, the verdict remains nuanced. The burger bowl isn’t a Big Mac in disguise, and the experience doesn’t perfectly mimic the original burger. On the other hand, it offers a fairly convincing way to find certain taste cues while changing the composition of the meal. It’s tasty, delicious and quite low in calories. We validate!
